OVEN SWEET POTATO WITH DIP
Oven-sweet potatoes are a simple dish that can be prepared without much effort. While the sweet potatoes are stewing in the oven, you can prepare the dip in a relaxed way. This fits, for example, a quinoa salad or a carrot salad. The sweet potatoes are very rich and well-fed, but a few vitamins can not hurt. Moreover, they are rather soft, as a crisp salad fits perfectly.But the best thing about this dish is that it cooks on its own - the sweet potatoes are simply cut in half and put into the oven.
What looks like guacamole is a delicious pea and coriander dip! Of course, you can also eat guacamole, but as Christina recently summed up so nicely and I've also hinted here before, I try to keep my avocado consumption rather low.Anyway, the pea dip is a great substitute for guacamole.
Vegan Oven Sweet Potato
- approx.6 small sweet potatoes
- 2 tablespoons sunflower ¶L
- (vegan) yoghurt or sour cream
- 50 g of green peas (deep freeze)
- 1 small clove of garlic
- 1 lime
- fresh coriander
Preheat oven to 200Â ° C. Halve the sweet potatoes and coat with oil on the cut side. Sprinkle with salt and pepper and place on a baking sheet lined with baking paper. Bake in preheated oven for about 20 minutes until soft inside.
Oven Spread the sweet potatoes on two plates, add a teaspoon of yogurt or sour cream, and a tablespoon of dip. Serve immediately.
